Locavore NXT

A long seasonal tasting menu built almost entirely from Indonesian producers, foragers and the restaurant's own food forest.

Purpose-built with a fermentation lab and a beverage lab on site. It is one of the most decorated restaurants in Southeast Asia, and it earns it. Expect around three hours at the table. Tables go weeks ahead, and there is no waiting list.

Will Goldfarb's dessert bar — a multi-course menu that leans savoury and borrows from the herb garden outside.

Goldfarb came through El Bulli and landed in Ubud; you may know him from Chef's Table. The room is playful, the tinctures are made from the garden, and the format has no real equal anywhere else. Go after dinner, or make it dinner.

Modern Indonesian cooking drawn from the whole archipelago, served in a soaring hall of translucent columns.

The columns are not just for show — they collect rainwater for the building. The kitchen pairs classics with dishes that push traditional spice pastes somewhere new. The name means "red and white", after the flag.

Wet Plate Kitchen

An intimate, dinner-only open kitchen run by chef Rendi Cuanda, cooking across Japanese, Korean, Thai and Southeast Asian flavours.

Every plate is cooked in full view. The name comes from wet-plate photography — the owners keep a studio on site — and the vintage room, the playlist and the cocktails make it the kind of place where a quick dinner turns into three hours.
